Healthy Cottage Cheese Pancakes Recipe | Yummy Blog

This week is Maslenitsa or also known as Butter Week, Crepe week or Cheese-fare Week. This holiday is celebrated in Easter Slavic. I couldn't say that I give much attention to religious and folk holidays, but I like pancakes, so why not to make some yummy, simple and best of all healthy pancakes!



This recipe requires three main ingredients cottage cheese, oatmeal and eggs All other ingredients are optional and can be used in different variations - here you can release your imagination. This time I kept my simple and add just a bit of sweetener and vanilla extract.

Ingredients (1-2 servings):
1/2 cup cottage cheese
1/2 cup oatmeal
3 eggs
sweetener to taste (optional)
1 t.sp. vanilla extract (optional)


Blend all ingredients in a blender until smooth.
Cook on the hot pan (dry or slightly greased).
Add some water if the batter seems to thick (for bigger thiner pancakes).


If make big thin pancakes - add filling (of your choice) and fold in half or if smaller simply serve with fruits, berries, yogurt, syrup etc.

And for comparison - without (1.) and with (2.) some water added.  I made them about same size, first are slightly smaller, fluffier and second are thinner but tastewise they are equally yummy.
