These wonderful carrot cupcakes are super easy to make and also they are very tasty. And these leopard (or cheetah) cupcake cups are so adorable.
Ingredients:
Carrots (raw, grated) - 600g (~2 cups)
Sugar - 1-1,5 cups
Eggs - 2
Flour - 2 cups
Sodium - 1 teaspoon
Vanillin - 8g
Frosting:
Cream cheese 170g
powdersugar ~1cup
vanilla flavor ~4g (optional)
Ingredients:
Carrots (raw, grated) - 600g (~2 cups)
Sugar - 1-1,5 cups
Eggs - 2
Flour - 2 cups
Sodium - 1 teaspoon
Vanillin - 8g
- Preheat oven to 180C (350F)
- Beat the eggs with sugar.
- Add the grated carrots. (I grated carrots using blender otherwise use fine grater)
- Add flour, baking soda, vanillin and mix everything thoroughly.
- Fill the cupcake cups with the batter and bake about 20 - 25 minutes or until a toothpick inserted into the center of a cupcake comes out clean.
- Remove from the oven, place on a wire rack, and let cool completely before frosting.
Frosting:
Cream cheese 170g
powdersugar ~1cup
vanilla flavor ~4g (optional)
- Mix together cream cheese and flavoring.
- Gradually add sugar until all well mixed.
- Frost cupcakes.
