Lately I am craving more and more veggies and it is a normal spring thing to me. So I have prepared myself yummy warm salad with lentils and full of veggies. So delicious!
Ingredients (for 2 portions):
Lentil, cooked - 1 cup
Bell pepper - 1/2 pcs.
Onion - 1 pc.
Summer squash/Zucchini - 1/2 pcs.
Garlic - 1-2 cloves
Spices - to taste
Olive oil - 2 tbsp.
Cut the vegetables.
In a frying pan covered with a lid, cook the vegetables in olive oil over medium heat for 5 minutes.
Add cooked lentils and spices (if desired, add more olive oil).
Mix everything.
Serve the salad while it is warm.
