This time I decided to share a recipe for simple salad, that is pretty hearty, and there are only few ingredients, what could be great for students who are on a budget.
I made a healthier version of the salad, but if you don't bother much - use mayonnaise, sausages (or whatever you like instead of the chicken), that will save you some time on preparation and maybe a bit of money. Well that's all up to you and let's get into the recipe!
Ingredients:
Instant noodles (spices and oil I threw away) - 1 pack (~50g)
Cooked chicken breast ~150g
Canned corn - 1 small can (~150g)
Fresh cucumber - 1 pc.
Natural / Greek yogurt - 200-300g
Mustard - 1 t.sp.
Salt - to taste
In a deep dish or container mix yogurt, mustard and salt or you can just use mayonnaise, but the yogurt sauce is healthier.
Add crushed to smaller pieces noodles.
Stir well, so that all the noodles are completely covered in the sauce.
Cover with a lid, a plastic wrap or a plate and put in the fridge for 1-2 hours (or overnight).
Meanwhile, prepare the rest of the ingredients - cook (if not yet cooked) and chop the chicken breast, cut the cucumber, drain the excess liquid from the corn. Actually I cooked chicken breast cut in small pieces and now I just tear it in a bit smaller pieces.
When the noodles absorbed the moisture and became soft,
add all the remaining salad ingredients.
Mix well.
If necessary, add more yogurt.
