Cranberries - one of my winter cravings. As I haven't baked cupcakes and muffins for a long time, I got an idea to bake ones with cranberries.
The recipe is super easy and quick to do and muffins are very delicious!
Ingredients:
200g sugar
50g butter or margarine (softened)
2 eggs
200g milk
450g flour
2 teaspoons baking powder
1/4 teaspoon salt
300g fresh, frozen or dried cranberries (coarsely chopped)

Ingredients:

Directions:
- Preheat oven to 175ºC (350ºF).
- Mix sugar and butter together in a bowl until completely blended.
- Add eggs one at a time, beating after each addition.
- Stir together flour, baking powder and salt in a separate bowl.
- Add flour mix alternately with the milk to the butter mixture.
- Add cranberries.
- Spoon into 12 paper-lined muffin cups, filling 3/4 full with batter (this time I filled 1/2 full and made small muffins).
- Bake 25-30 minutes or until golden brown.
- Makes 12 muffins (or more, depends of size of forms have been used or how full is forms filled).
