Whole month of October it was all about Halloween
and pumpkins 🎃 so I also finally got my hands on making one
pumpkin pie/cake. 🍰
Ingredients:
1 cup pumpkin puree
1 cup Stevia (or other sugar substitute)
1 teaspoon baking powder
1 teaspoon vanilla
1/2 teaspoon pumpkin pie spice
Pinch of salt
4 large eggs
200g almond flour or hazelnut flour
quark
heavy whip cream
gelatin (gelling agent)
Grease well a cake pan.
In a bowl, mix together - pumpkin puree, stevia, baking powder, vanilla, spice and salt, until all well mixed.
Beat in the eggs, then add the flour. If needed add a little bit of water so that batter would be thick, but pourable.
Pour batter in the pan and bake at 150°C (300°F) for about 60-75 minutes, until the cake pulls away from the sides of the pan and a toothpick comes out clean.
Let it to cool down completely in the pan on a rack.
Dissolve gelatin.
Beat quark and heavy whip until smooth and add gelatin. Mix all well.
Pour cream on top of cake and place in a fridge for some hours (2-4h) or overnight.
