Today I am sharing a delicious, easy and healthy breakfast idea. Don't want to call it a recipe, because all ingredients and proportions can be easily changed, so there are endless variations of taste that will never makes it boring. Basically only method (idea) stays pretty much the same.
Ingredients:
1 a bunch of broccoli florets (I used ~200g)
5 large eggs, lightly beaten
1/3 cup chopped green onions (I had ~80g)
100g grated mozzarella
salt, pepper to taste
100g bacon (One slice per a muffin pan well)

Method:
1) Steam the broccoli florets until just tender.
2) Rinse with cold water to stop the cooking.
3) Finely chop the steamed broccoli florets.
4) Preheat oven to 180°C (~350°F)
5) In a large bowl mix together - beaten eggs, broccoli, onions, cheese, salt and pepper.
6) Coat the wells of muffin pans with olive oil (so nothing will stick).
7) Place slices of bacon around the sides of the muffin pan wells.
8) Fill in the muffin wells with egg mixture.
9) Bake for about 20 minutes until cooked through and lightly browned on top.
So, here they are, just out of the oven and ready to be eaten!
