Banana Pancake Cake

This is easy, healthy and delicious way to treat your self or for those days when you have a craving for a piece of cake.


You'll need:
Bananas - 2
Eggs - 2
Baking powder - 1 teaspoon
Cinamon (optional) - 1 teaspoon or to your taste 
Cream cheese - 200g
Vanilla - 1 teaspoond


If you know how to do banana pancakes, then just skip to end (5.).

Process:
1. Mash bananas.
2. In separate bowl beat the eggs.
3. Mix in mashed bananas
4. Grease the pan and bake pancakes (this batter is enough for 5-6 pancakes). don't worry if some splits, breaks or looks a bit messy, that all will be hidden anyway

5. When the pancakes are done, leave them to cool down.
6. Mix cream cheese with vanilla.
7. When pancakes are cooled, start creating a cake. Take one pancake coat with a cream cheese put next on top and repeat.
8. Decorate with berries, chocolate or anything to your wish.


You can eat the cake straight away or leave in fridge for some hours or overnight. Me personally prefer second option, then the cream is set and all flavors have well blended.
So here is a piece of cake just after it was done. You can see that cream is runny and this piece look a bit messy but tastes good though.


And here is the piece cutted the next day. Cake is firm, everything stays in place, and it is still tasty or even tastier (at least for me).
