Today I am sharing a simple and very tasty recipe for rice cooked in a Mexican style. This rice is fragrant, juicy and very hearty.
It can be served as a side dish to meat dishes or even as a main by adding some fresh veggies so it suits vegans.
Ingredients:
Brown rice 125g
Bulgarian pepper 1-2 pcs.
Garlic 1-2 cloves
Onions 1 pc.
Canned beans 1 can (400g)
Canned corn 1 small jar (150g)
Tomato sauce 2 tbsp.
Salt - to taste
Powder of chili or paprika 1 teaspoon.
Peel, chop garlic, onion and pepper.
In a frying pan, in a small amount of butter, lightly fry them.
Add rice, salt and spices.
Stir, add more oil if necessary.
All fry for a couple of minutes.
Add the tomato sauce and a glass of water.
Mix everything, bring to a boil.
Reduce heat and leave to stew under the lid.
After 15-20 minutes add the beans and corn.
Stir and continue to stew until rice is ready, stirring occasionally so that nothing burns. If it seems that there is not enough water, add a little.
