Low Carb Gingerbreads

At this time shelves in stores are full of different kind, shape and size treats, it is such a huge temptation, but you want to stay fit and healthy. Today I am sharing recipe for one of the most popular Christmas treat - gingerbreads.


Gingerbreads are traditional Christmas treats in many countries and for every culture has its own traditional gingerbread recipes. But they all have something common - spices. I have tried a bunch of healthy gingerbread recipes, and this one is my fave.

You will need:

  • 2  egg whites
  • 2 tablespoon coconut oil/butter
  • 200g almond flour
  • 1/2 teaspoon vanilla 
  • 4g stevia 
  • a pinch of salt
  • 2 tablespoon ground ginger 
  • 3 teaspoons cinnamon
  • 1 teaspoon ground nutmeg
  • (optional: 1 tablespoon of honey)



Instructions:

  1. In a mixing bowl, whisk egg white and coconut oil/butter.
  2. Add almond flour, vanilla, sweetener, salt, ginger, cinnamon, nutmeg and mix well. You can also add a tablespoon of honey, ofcourse that will add extra carbs and calories. I tried both with and without honey and with honey I liked better, it sort of makes cookies complete.
  3. Freeze dough for about 10 minutes (or leave in fridge for about 1 hour). The dough should be firm (not frozen).
  4. Preheat oven to 175C (350F).
  5. Line a baking tray with parchment paper.
  6. Place dough inbetween two baking sheets or plastic food wrap.
  7. Using a rolling pin (or if you don't have one - cup, buttle, jar etc. with smooth surface) to flatten out the dough a little but don't make it too thin. It should be about 0,5-1cm (about 1/4 inch) in thickness. 
  8. Remove top piece of parchment paper or wrap.
  9. Using cookie cutters, glass or just knife create cookie shapes. (I simply used glass and made all my gingerbreads round)
  10. Carefully transfer cookies to baking tray. Use excess dough for another cookie.
  11. Bake for about 15 minutes.
For softer cookies - remove from oven promptly. 
For crispier cookies - turn off the oven and leave them in oven for an additional 10-20 minutes.

I decorated mine using melted dark chocolate.

Now it is time to have a cup of tea with these yummies.
